  • 3 shallots/green onions/scallions, finely sliced

  4. Mix and shake the pan to make sure the rice is spread out evenly.
  5. Spread the prepared mushrooms over the rice. They should mostly cover the surface but will be partially submerged.
  6. Drizzle olive oil over the top of the dish.
  7. Bake in the preheated oven for 35 – 40 minutes, or until the mushrooms are golden. After baking, remove from the oven and let it rest for 5 minutes.
