Tofu soup combines fresh mushrooms with softened dried mushrooms, firm tofu, broccoli, and peas. Garlic, ginger, and a little red chili start the pot before broth is added. Miso is blended with some hot liquid near the end instead of dropped as a hard lump into a finished bowl.
This tofu soup restores the three tablespoons soy sauce used in the checked recipe but missing from the earlier ingredient list. It also gives the dried mushrooms a defined water allowance and includes instructions for the noodles. Four bowl portions can be served with or without those optional noodles.

Why This Recipe Works
Dried mushrooms contribute both pieces and a soaking liquid, while fresh mushrooms give the pot another texture. Straining the soaking liquid keeps grit out of the broth. Tofu soup is simmered gently so the cubes stay together and the broccoli does not need a long rolling boil.
Soy sauce and miso both contribute salt. The existing half teaspoon salt is a maximum starting allowance to taste rather than a reason to add it before evaluating the broth. Noodles cooked separately are easier to divide and do not thicken every stored portion.
Ingredients for Tofu Soup
Use sixteen ounces firm tofu, drained and cubed, and eight ounces fresh mushrooms. The three-quarter cup dried mushrooms is the measure before soaking. Tofu soup uses six cups vegetable broth plus up to two cups strained soaking liquid; do not replace the entire broth allowance with mushroom water.
Use reduced-sodium soy sauce for the restored three tablespoons. The heaping tablespoon miso remains a finishing ingredient. Four servings noodles means the serving amount on your noodle packet, cooked according to that packet, not four cups dry noodles. The scallion, cilantro, and drizzle of sesame oil are garnishes; no raw egg is required.
For the Soup Base
- 2 tablespoons olive oil (for sautéing)
- 3 cloves garlic (grated)
- 1.5 inches ginger (grated)
- 0.5 pieces red hot chili (thinly sliced)
- 8 ounces mushrooms (chopped) (fresh, chopped)
- 6 cups vegetable broth
- 0.5 teaspoon salt (up to this amount, to taste after soy sauce and miso)
- 2 twists black pepper
For the Vegetables and Tofu
- 16 ounces firm tofu (diced) (drained and cubed)
- 1 cup broccoli florets (substitute for other vegetables if desired)
- 0.75 cup frozen peas (optional substitutions include snow peas or edamame)
- 0.75 cup dried mushrooms (soaked) (dry measure before soaking; follow package until soft)
- 1 heaping tablespoon miso paste (dissolve in a little hot broth near the end)
- 4 servings noodles (optional; four packet servings, cooked separately)
For Garnishing
- 1 piece scallion (chopped)
- 1 bunch cilantro (for freshness)
- 1 drizzle sesame oil (for serving)
Restored seasoning and soaking liquid
- 3 tablespoons reduced-sodium soy sauce (for mushrooms before broth)
- 2 cups hot water (for soaking dried mushrooms; strain and add up to this amount)
- as needed water (for cooking optional noodles according to the packet)
How to Make Tofu Soup
Cover the dried mushrooms with about two cups hot water in a heat-safe bowl and leave until soft, commonly ten to twenty minutes for thin pieces. Follow the package if it requires longer. While they soften, cut the fresh mushrooms, grate garlic and ginger, and prepare tofu and vegetables.
Heat olive oil in a large pot. Stir garlic, ginger, and chili for about a minute without scorching. Lift and squeeze softened mushrooms, chop large pieces, and add with the fresh mushrooms and soy sauce. Cook about five minutes, stirring so the bottom does not catch.
Strain the soaking liquid through a fine sieve lined with a suitable filter if needed. Add up to two cups with the vegetable broth, bring to a boil, then add tofu, broccoli, and peas. Simmer tofu soup for ten to fifteen minutes until the vegetables are cooked to your preference.
Cook optional noodles separately while the broth simmers. Dissolve miso in a little hot broth and stir it into the pot near the end. Taste and use the salt allowance only as needed. Divide noodles among four bowls, ladle tofu soup over them, and finish with scallion, cilantro, and a little sesame oil.
How to Serve
Serve tofu soup hot in bowls large enough for the vegetables and broth. Add the optional noodles before ladling if wanted, and let each person choose some garnish. Four servings includes the pot shared evenly, without an exact nutrient claim. Keep extra prepared noodles separate when people may want smaller portions or when saving some broth for another meal.
Storage
Refrigerate tofu soup within two hours in shallow containers and use within three to four days. Store noodles separately so they do not absorb most of the broth. Reheat leftovers to 165°F throughout. For freezing, the broth and vegetables can change texture; firm tofu may become more porous, so treat that as a quality change rather than expecting the same fresh bowl.
The missing soy quantity and mushroom-broth method were checked against Nico Pallotta at The Plant Based School. For clean preparation and prompt refrigeration, follow FDA safe food handling guidance.
Tips and Variations
Do not trust a five-minute soak for every dried mushroom package. Tofu soup works best when the dried pieces are actually soft before sautéing. If your package takes longer, extend the preparation schedule rather than cooking leathery pieces on a timer.
Add miso after loosening it with broth, and season only after the soy and miso are both present. Using a different broth brand can change saltiness substantially. This recipe is not automatically gluten-free because soy sauce and the optional noodles may contain wheat.
