Ingredients
  

Burger Mixture

  • 1 cup chopped fresh spinach
  • 1 teaspoon minced garlic
  • ½ cup grated yellow onion
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt used for burger mixture
  • ¼ teaspoon ground black pepper used for burger mixture
  • 6 ounces crumbled feta
  • 1 pound ground turkey

Sauce

  • ½ cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon kosher salt for sauce
  • 2 pinches ground black pepper for sauce

Toppings

  • 4 pieces hamburger buns lightly toasted if desired
  • Green leaf lettuce for topping
  • Sliced tomato for topping

Instructions
 

Preparation

  • In a large bowl, combine chopped spinach, minced garlic, grated yellow onion, dried oregano, kosher salt, ground black pepper, crumbled feta, and ground turkey. Mix until just combined.
  • Divide the turkey mixture into 4 equal portions and shape each portion into a 1-inch thick patty.

Cooking

  • Heat a heavy skillet or cast-iron pan over medium-high heat. Add the patties to the hot pan and cook for 4-5 minutes on each side, flipping them only once.
  • While the patties cook, in a small bowl combine Greek yogurt, lemon juice, kosher salt, and ground black pepper.

Assembly

  • Lightly toast the hamburger buns, if desired. Spread the sauce on the buns, then add lettuce, sliced tomato, and turkey patties. Serve warm.
