  • 1 5-7 pound fully cooked boneless ham
  • ¼ cup brown sugar for the spice rub
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • ½ teaspoon cumin
  • ¼ teaspoon allspice
  • ¼ teaspoon pepper
  • 1 20-ounce can drained pineapple rings
  • ¼ cup drained maraschino cherries
  • ¼ cup water for the roasting pan
  • ½ cup pineapple juice
  • ½ cup brown sugar for the glaze
  • ¼ cup Dijon mustard
  • 1 tablespoon Worcestershire sauce

Instructions
 

Preparation

  • Adjust the oven rack in the lower third of the oven and preheat it to 325 degrees Fahrenheit.
  • Prepare a roasting pan by placing a roasting rack inside.
  • Place the fully cooked ham on the rack inside the roasting pan.
  • In a small bowl, mix ¼ cup brown sugar, 1 teaspoon coriander, 1 teaspoon cinnamon, ½ teaspoon cumin, ¼ teaspoon allspice, and ¼ teaspoon pepper.
  • Rub this spice mixture all over the ham evenly.

Making the Glaze

  • In a small saucepan, whisk together ½ cup pineapple juice, ¼ cup Dijon mustard, ½ cup brown sugar, and 1 tablespoon Worcestershire sauce. Heat this mixture over medium-high heat until it melts and thickens slightly.
  • Baste half of this pineapple glaze all over the ham.
  • Place the drained pineapple rings on top of the ham. Use toothpicks to secure the pineapple in place, if necessary.
  • Secure a maraschino cherry in the center of each pineapple ring with a toothpick.
  • Pour ¼ cup water into the bottom of the roasting pan.

Baking

  • Bake the ham uncovered for 1 hour or until the internal temperature reaches 140 degrees Fahrenheit.
  • Remove the ham from the oven and brush it with the remaining pineapple glaze.
  • Switch the oven to broil and place the ham back in for another 2-4 minutes, or until the glaze caramelizes.
  • Let the ham rest for a few minutes before slicing and serving.

Notes

For an extra layer of flavor, let the spice rub sit on the ham for a few hours or overnight in the refrigerator before cooking. Use fresh pineapple and cherries if you want to make it even more special. Monitor the ham closely while broiling to avoid burning the glaze.
