Skillet Garlic Butter Steak and Shrimp

Ingredients
  

For the Steak

  • 2 pieces lean New York Steak strip steaks (or steak of choice)
  • to taste Salt
  • to taste Ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

For the Shrimp and Garlic Butter

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons minced garlic (about 6 cloves)
  • ¼ cup softened salted butter
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano

Instructions
 

Preparation

  • Remove the steaks from the refrigerator and pat them very dry with paper towels. Season both sides liberally with salt and pepper, then let them sit at room temperature for 20-30 minutes.
  • In a bowl, combine ¼ cup softened salted butter, 1 tablespoon minced garlic, thyme, rosemary, oregano, salt, and pepper to prepare the garlic compound butter. Set aside.

Cooking

  • Heat a large, heavy-bottomed skillet over high heat. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter, then add the steaks. Cook each side for about 3 minutes or until a nice crust forms.
  • Reduce the heat to medium-high and cook until the steaks reach your desired doneness (approximately 8 minutes total). Remove the steaks to a plate to rest.
  • Lower the heat to medium. Add the shrimp and 1 tablespoon minced garlic to the skillet. Cook for 2-3 minutes until the shrimp turns opaque.
  • Turn off the heat, place the steaks back in the skillet, and top with the garlic compound butter. Serve immediately.

Notes

Serve hot with fresh vegetables, rice, or a light salad. Add a squeeze of lemon for extra brightness. To store leftovers, let them cool completely and place in an airtight container for up to 3 days.
