  • 4 cups boxed stuffing bread crumbs

  • 1 teaspoon dried thyme
  • 1 large beaten egg
  • 1 cup chicken broth

Preparation

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • In a medium-sized saucepan over medium-high heat, add olive oil, onion, celery, and carrots. Cook until the veggies are tender, about 3 minutes. Remove the pan from the heat and set it aside.

Mixing and Forming

  • In a large bowl, combine the cooked veggies, ground sausage, stuffing bread crumbs, parsley, thyme, beaten egg, and chicken broth. Mix using your hands until everything is combined.
  • Using a 2-inch scoop, scoop the mixture and roll it into balls. Place each ball on the prepared pan.
