  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes Add more if you like it spicy.
  • ½ teaspoon Italian seasoning
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour Can substitute with a gluten-free flour blend.
  • cups whole milk Adjust for desired gravy thickness.
  • to taste Fresh sage or fresh thyme For garnish.

For the Biscuits

  • Basic ingredients for homemade biscuits Refer to your favorite biscuit recipe. Ensure chilled butter for fluffiness.

Instructions
 

Preparation of Sausage Gravy

  • Heat a skillet over medium heat and add the breakfast sausage, breaking it apart with a spatula.
  • Season the sausage with salt, black pepper, red pepper flakes, and Italian seasoning.
  • Cook the sausage for 6 to 8 minutes or until browned and cooked through.
  • Push the cooked sausage to one side of the skillet.
  • Add unsalted butter to the empty side of the skillet and let it melt.
  • Sprinkle all-purpose flour over the melted butter and whisk continuously.
  • Cook the roux for 1-2 minutes until golden brown.
  • Gradually pour in whole milk, stirring constantly.
  • Continue stirring until the gravy thickens, approximately 3-5 minutes.
  • Remove the skillet from heat once the desired thickness is achieved.

Serving

  • Serve the sausage gravy hot over freshly baked biscuits.
  • Garnish with freshly ground black pepper and fresh herbs if desired.

Notes

Store leftover sausage gravy and biscuits separately in airtight containers. Gravy lasts 3 days, biscuits best within 2 days. Reheat gravy on the stove over low heat and microwave biscuits briefly.
