Old Fashioned Apple Cobbler

Ingredients
  

For the filling

  • 2 pounds sliced Granny Smith apples (peeled and sliced ¼ inch thick) Use Granny Smith for their tartness.
  • cup packed brown sugar
  • ½ cup apple juice
  • 1 teaspoon cinnamon Plus additional for sprinkling.
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the biscuit topping

  • 1 ¼ cups all-purpose flour
  • 1 cup granulated sugar Plus 1 tablespoon for sprinkling.
  • 2 teaspoons baking powder
  • 10 tablespoons cold butter (sliced) Must be cold for flakiness.
  • ¾ cup milk

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a 9 x 13-inch pan.
  • Add 2 pounds of sliced Granny Smith apples to the bottom of the pan.
  • In a medium-sized saucepan, combine brown sugar, apple juice, cinnamon, lemon juice, and cornstarch. Bring to a boil, then reduce heat and simmer until thickened for about 2 minutes. Pour over the apples and toss to coat.

Biscuit Topping

  • Mix flour, sugar, and baking powder in a bowl.
  • Add cold butter and mix until crumbly.
  • Stir in milk until well combined.
  • Spread the biscuit topping over the apples in the pan. Sprinkle with granulated sugar and cinnamon.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and cooked through.

Notes

Serve warm with vanilla ice cream or whipped cream. Can store in the refrigerator for up to 4 days or freeze for up to 3 months.
