Ingredients
  

Apple Filling

  • 4 apples (Tart Apples, like Granny Smith or Honey Crisp) Use a mix of sweet and tart apples for better flavor.
  • 1 tablespoon Lemon Juice (Fresh Squeezed or Bottled)
  • 1/4 cup sugar (granulated) Adjust based on sweetness of apples.
  • 1/4 cup all-purpose flour (White Flour)
  • 1 teaspoon ground cinnamon (Ground Cinnamon)
  • 2 tablespoons butter (Salted Butter) Dot on apple mixture before baking.

Crust

  • 2 pie crusts (Store-Bought or Homemade Pie Crust)
  • 1 large egg Beaten with water for egg wash.
  • 1 tablespoon Water To mix with egg for brushing.
  • 1 tablespoon sugar (granulated) (Turbinado or Granulated White Sugar) Sprinkle on top before baking.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Take the store-bought pie crust out of the refrigerator and set it on the counter for 15 minutes to warm up.
  • While the crust rests, peel, core, and chop the apples into small pieces.
  • In a bowl, combine the apples, lemon juice, sugar, flour, and cinnamon. Mix well until the apples are coated.
  • Roll out the pie crust and cut it into small circles (about 4-5 inches wide) to fit in muffin tins.
  • Place the pie circles into a greased muffin tin, pressing them down gently to form cups.
  • Fill each mini pie crust with the apple mixture and dot with small pieces of butter.
  • Beat the egg with water and brush it over the crusts for a nice golden finish.
  • Sprinkle a little sugar on top for extra sweetness.

Baking

  • Bake in the preheated oven for 20-25 minutes or until the tops are golden brown.
  • Let them cool for a few minutes before serving.

Notes

Store any leftover mini apple pies in an airtight container at room temperature for up to two days, or in the refrigerator for up to one week. They can be frozen for up to three months. Tips: Don’t overfill the mini pies; too much filling can cause them to overflow while baking. You can customize the fruit used in the recipe based on preference.
