  • 4 filets salmon filets (skinless)
  • 1 tablespoon olive oil
  • 2 teaspoons dried Italian seasoning
  • ½ teaspoon Kosher salt
  • ¼ teaspoon cracked black pepper
  • 3 tablespoons butter
  • 2 teaspoons garlic (minced)
  • 3 tablespoons flour
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup parmesan (grated)
  • ½ cup sun-dried tomatoes (drained)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon lemon zest
  • Fresh basil (for garnish)

Preparation

  • Season both sides of the salmon filets with olive oil, Italian seasoning, salt, and pepper.

Cooking

  • In a large pan over medium heat, add the seasoned salmon filets. Cook for about 4-5 minutes on each side until fully cooked. Remove and set aside.
  • In the same pan, melt butter over medium heat. Add minced garlic and sauté for about 1 minute. Whisk in the flour until it forms a paste.
  • Gradually pour in chicken broth while whisking to avoid lumps. Continue whisking until the mixture thickens.
  • Stir in heavy cream, grated parmesan, sun-dried tomatoes, Italian seasoning, and lemon zest. Cook for a few minutes until the sauce is smooth.

Finishing

  • Return the cooked salmon to the pan, coating it with the sauce. Let it simmer for a couple of minutes for the flavors to blend.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave. For best flavor, use fresh garlic and high-quality parmesan. Be cautious not to overcook the salmon.
