Ingredients
  

For the Meatballs

  • 1.5 pounds ground chicken
  • 0.5 cup dried Italian bread crumbs
  • 1 large egg
  • 1 tablespoon Italian seasoning
  • 1 teaspoon minced garlic
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt (to taste)
  • 0.25 cup grated Parmesan cheese

For Cooking

  • 3 tablespoons olive oil
  • 3 tablespoons butter

For the Sauce

  • 2 teaspoons minced garlic
  • 3 tablespoons all-purpose flour
  • 1.5 cups chicken broth
  • 0.75 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup sun-dried tomatoes (drained)
  • 1 teaspoon dried Italian seasoning

For Serving

  • 0.25 cup fresh basil (for garnish)

Preparation

  • In a bowl, mix together the ground chicken, dried Italian bread crumbs, egg, Italian seasoning, minced garlic, onion powder, salt, and grated Parmesan cheese until everything is well combined.
  • Form the mixture into small meatballs, about 1-inch in size.

Cooking

  • Heat olive oil and butter in a large skillet over medium heat. Add the meatballs and cook them until golden brown on all sides for about 6-7 minutes.
  • Remove the meatballs from the skillet and set them aside.
  • In the same skillet, add minced garlic and cook for a minute. Then, sprinkle in the flour and whisk it together.
  • Slowly add the chicken broth and heavy cream, stirring until smooth.
  • Add grated Parmesan, sun-dried tomatoes, and Italian seasoning to the sauce. Return the meatballs to the skillet and let everything simmer for a few minutes until the sauce thickens.

Serving

  • Garnish with fresh basil before serving.

Notes

Store leftover Marry Me Chicken Meatballs in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in the microwave or on the stovetop until heated through.
