  • 1 pound sliced Italian sausage or kielbasa sausage
  • 1 tablespoon olive oil
  • 3 cups sliced bell peppers about 3 whole bell peppers sliced about ½-inch thick
  • 1 cup sliced onion about 1 small onion sliced about ½-inch thick
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1 15-ounce can diced tomatoes not drained
  • 1 8-ounce can tomato sauce
  • to taste Salt
  • to taste Ground black pepper

Cooking

  • Heat a large skillet over medium-high heat.
  • Add the sliced Italian sausage to the skillet and cook for 4-5 minutes until browned. Remove the sausage from the pan and set it aside on a plate.
  • In the same skillet, add olive oil, sliced bell peppers, and sliced onion. Cook until the vegetables are tender, about 5-6 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Return the sausage to the skillet along with Italian seasoning, diced tomatoes, and tomato sauce. Season with salt and ground black pepper to taste.
  • Let the mixture simmer for about 5 minutes until heated through. Serve warm.

Notes

Feel free to use different colors of bell peppers for a vibrant look. Adjust the amount of garlic or seasoning to suit your taste. For extra flavor, try adding fresh herbs like basil or parsley just before serving.
