  • 1 package (10.8-ounce) frozen vegetable medley An Asian medley is recommended, but fresh vegetables can be substituted.
  • 2 cups chicken broth
  • ¼ cup soy sauce Use gluten-free soy sauce for a gluten-free option.
  • ¼ cup honey
  • 1 tablespoon brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • ½ teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch Ensure it's mixed well with the liquid for thickness.
  • Sesame seeds and chopped green onion (for garnish) Optional garnish for added flavor.

Instructions

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Spray a 13 x 9 x 2-inch rectangular baking dish with nonstick cooking spray.
  • Place 8 ounces of uncooked spaghetti noodles in the bottom of the prepared baking dish.
  • Layer the frozen vegetable medley on top of the uncooked spaghetti noodles.
  • Add chicken breast pieces on top of the noodles and vegetables.
  • In a medium-sized bowl, whisk together chicken broth, soy sauce, honey, brown sugar, rice vinegar, sesame oil, ground ginger, minced garlic, and cornstarch.
  • Pour the mixture over the pasta, vegetables, and chicken.

Baking

  • Cover the baking dish with aluminum foil and bake for 30 minutes.
