  • 2 pounds ground beef Use a mix of 80% lean and 20% fat for best results.
  • 4 Tablespoons unsalted butter, melted
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons brown sugar
  • 1 Tablespoon soy sauce
  • 1 1/2 teaspoons Morton kosher salt *
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder

Preparation

  • Prepare a large plate or small baking sheet with two pieces of parchment or wax paper. Set aside.
  • In a medium mixing bowl, whisk together the melted butter, Worcestershire sauce, brown sugar, soy sauce, salt, pepper, paprika, garlic, and onion powder.
  • Place the ground beef in a large bowl. Pour the seasoning mixture over the beef.
  • Using your hands (you may want to wear gloves), gently mix the meat and seasoning together.
  • Divide the meat into six portions or use a kitchen scale to weigh out 6 portions of about 5.3 ounces each. Shape each portion into a round patty, making a small well in the center to prevent shrinkage.
  • Place the patties on the prepared plate or baking sheet with parchment, using the paper in between to keep them from sticking together.

Cooking

  • To cook the burgers, heat a large stainless steel skillet over medium-high heat and add about 1 Tablespoon of neutral oil.
  • Place 1-2 patties in the skillet. If you like, use a burger press to flatten the burgers. Fry for 2-3 minutes.
  • Flip the patties and cook for another 2 minutes, depending on how thick they are and how well-done you want them. Add cheese if desired and cover the pan for about 30 seconds to melt it.
  • Remove from heat and serve.

Notes

Allow leftover patties to cool completely, then store in an airtight container in the refrigerator for up to 3-4 days. They can also be frozen for up to 3 months. Experiment with different spices and toppings for variety.
