Potatoes

  • 4-5 medium medium russet potatoes Russet potatoes work best due to their starchy texture.

Seasoning

Garlic Butter Mixture

  • ½ cup melted butter
  • 1 teaspoon fresh parsley (finely chopped) Adjust herbs based on preference.
  • 1 teaspoon fresh thyme (finely chopped) Can substitute with other herbs.
  • 1 teaspoon fresh rosemary (finely chopped) Can substitute with other herbs.
  • 3 cloves minced garlic

Preparation

  • Preheat the oven to 425 degrees Fahrenheit.
  • Wash and scrub the potatoes well.
  • Slice the potatoes thinly down to about ½ inch from the bottom, creating a 'fan' effect.
  • Sprinkle salt and pepper over the potatoes to taste.

Making Garlic Butter

  • In a small bowl, mix together the melted butter, fresh parsley, fresh thyme, fresh rosemary, and minced garlic.

Baking

  • Place the sliced potatoes in a 9 x 13-inch baking dish.
  • Brush the garlic herb butter generously along the tops and between the slices of the potatoes.
  • Roast the potatoes in the preheated oven for 40-60 minutes, or until they are fork-tender.

Notes

Use a wooden spoon handle when slicing the potatoes to avoid cutting all the way through. For more flavor, consider adding grated cheese on top during the last 10-15 minutes of roasting. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
