Easy Chicken Lo Mein

Ingredients
  

For the Sauce

  • 3 Tablespoons low sodium soy sauce
  • 3 Tablespoons hoisin sauce
  • 1 teaspoon sesame oil

Main Ingredients

  • 8 ounces uncooked lo mein noodles See Kelly’s Note
  • 2 teaspoons olive oil
  • 1 teaspoon sesame oil
  • 1.5 Tablespoons minced garlic
  • 2 medium boneless, skinless chicken breasts cut into thin strips
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 3 cups fresh spinach

Instructions
 

Make the Sauce

  • In a small bowl, mix together the soy sauce, hoisin sauce, and sesame oil. Set it aside for later.

Make the Lo Mein

  • Cook the lo mein noodles according to package instructions. Drain and set aside.
  • In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat.
  • Add the minced garlic and stir for about 30 seconds.
  • Next, add the thin strips of chicken to the skillet. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Add the shredded carrots, snow peas, and spinach. Stir-fry for another 3-4 minutes until the veggies are tender.
  • Finally, add the cooked lo mein noodles and the sauce to the skillet. Toss everything together until well combined and heated through.

Notes

Serve hot, garnished with green onions or sesame seeds if desired. It pairs wonderfully with a side of spring rolls or a fresh salad. Store in an airtight container for up to 3 days.
