Ingredients
  

For the Salmon

  • 4 ounces salmon fillet, cubed Cut into 1-inch cubes
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ¼ teaspoon onion powder

For the Rice Bowl

  • 1 cup cooked rice Any kind works
  • ½ avocado, diced or sliced
  • ¼ cup carrots, shredded
  • ¼ cup mini cucumbers, sliced
  • ¼ cup edamame, cooked

For the Sauce

  • 1 tablespoon soy sauce Or tamari or coconut aminos
  • 2 tablespoons mayonnaise
  • 2 teaspoons sriracha
  • Sesame seeds Optional for garnish

Instructions
 

For the Salmon

  • Preheat your air fryer to 400°F (200°C).
  • In a bowl, toss the salmon cubes with kosher salt, pepper, and onion powder.
  • Place the salmon cubes in the air fryer basket in a single layer.
  • Cook for about 8-10 minutes or until the salmon is cooked through and flakes easily with a fork.

To Assemble

  • In a bowl, add 1 cup of cooked rice as the base.
  • Top it with the air-fried salmon.
  • Layer on the diced avocado, shredded carrots, sliced mini cucumbers, and cooked edamame.
  • Drizzle with soy sauce, mayonnaise, and sriracha.
  • Sprinkle sesame seeds on top if desired.

Notes

Make sure not to overcrowd the air fryer basket; leave some space for the hot air to circulate. Feel free to add your favorite veggies or change the rice type based on what you have on hand. For extra flavor, marinate the salmon beforehand in soy sauce or your favorite seafood seasoning. Store leftovers in an airtight container in the refrigerator for up to 2 days.
