Ingredients
  

Wet Ingredients

  • 1.25 cups Fairlife chocolate milk
  • cup natural peanut butter
  • 5.3 oz container vanilla Greek yogurt (i.e. Oikos Pro 20 Gram Protein)
  • 1 large egg

Dry Ingredients

  • 2 cups Kodiak Dark Chocolate Power Cakes pancake mix
  • ½ cup dark chocolate chips

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 12-count muffin tin or line it with paper liners.
  • In a large bowl, mix together the chocolate milk, peanut butter, yogurt, and egg. Whisk until well combined.
  • Add the Kodiak pancake mix and chocolate chips. Stir until just combined.
  • Portion the batter evenly into the muffin tin.

Baking

  • Bake at 350°F (175°C) for 14-17 minutes, or until muffins are cooked through and a toothpick comes out clean from the center.

Cooling

  • Let cool in the pan for 5 minutes, then transfer to a cooling rack to finish.

Notes

Store in an airtight container at room temperature for up to 3-4 days. Can be frozen for up to 2-3 months; thaw in the refrigerator or microwave when ready to eat.
