  • 2 pounds boneless skinless chicken thighs
  • to taste Kosher salt and pepper
  • 1/3 cup bourbon (or whiskey, apple juice, or chicken broth) Substitutes can be used
  • 3/4 cup brown sugar
  • 3/4 cup soy sauce Use low-sodium if preferred
  • 2 cloves garlic (minced)
  • 2 tablespoons cornstarch For thickening the sauce
  • 3 tablespoons cold water For the cornstarch slurry

Preparation

  • Season the chicken thighs with kosher salt and pepper on both sides, then place them at the bottom of the crockpot.
  • In a medium bowl, mix together the bourbon, brown sugar, soy sauce, and minced garlic. Stir well to combine the ingredients.
  • Pour the mixture over the chicken in the crockpot.
  • Cover the crockpot with the lid and cook on low for 4 hours or on high for 3 hours.
  • About 30 minutes before the cooking time is complete, mix the cornstarch and cold water in a small bowl to create a slurry. Whisk it into the sauce in the crockpot to thicken it.

Serving

  • Once done, enjoy the chicken over rice, garnished with green onions.

Notes

For extra flavor, consider marinating the chicken in the sauce for a few hours before cooking. Make sure to use low-sodium soy sauce if you're watching your sodium intake. Feel free to adjust the amount of bourbon based on your taste preferences.
