Cooking

  • In a large pot, heat olive oil over medium-high heat. Add Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté onions and garlic until translucent, about 3-4 minutes.
  • Stir in diced tomatoes, chicken stock, dried basil, oregano, and browned sausage. Simmer for 10 minutes.
  • Add ditalini pasta and cook according to package instructions, about 7-9 minutes.
  • Lower heat and stir in heavy cream and Parmesan cheese until melted.
  • Season with salt and black pepper. Garnish with parsley before serving.

Notes

Serve this delicious soup hot in bowls. You can add extra grated Parmesan cheese on top or serve it with crusty bread.
