  • 1.5 lbs lean ground beef Use lean ground beef for a healthier option.
  • 3 pieces eggs
  • 45 crackers Ritz crackers (crushed) About 1 1/2 sleeves.
  • 0.5 cup finely chopped onion
  • 0.25 cup finely diced green pepper Can be omitted if preferred.
  • 4 oz shredded sharp cheddar cheese
  • 0.5 cup milk
  • 1 tsp salt
  • 0.25 tsp pepper

Topping Ingredients

  • 0.5 cup ketchup
  • 0.5 cup brown sugar
  • 1 tsp yellow mustard

Preparation

  • Preheat your oven to 350 ℉. Line a baking sheet with parchment paper or aluminum foil.
  • In a small bowl, mix the topping ingredients (ketchup, brown sugar, and mustard) and set aside.
  • In a large bowl, beat the eggs. Then add the crushed Ritz crackers, chopped onion, green pepper (if using), milk, salt, pepper, and shredded cheese. Stir everything until combined.
  • Add the lean ground beef to the mixture and mix well.
  • Shape the meatloaf mixture into a loaf and place it onto the prepared baking sheet.

Cooking

  • Bake it in the oven for 30 minutes. After that, spread the topping over the meatloaf.
  • Bake for an additional 30 minutes or until the center reaches 160 ℎ.
  • Let it stand for 5-10 minutes before slicing. Serve and enjoy!

Notes

For added flavor, you can include chopped garlic or Worcestershire sauce in the meat mixture. Don't skip the resting time after baking; it helps the juices settle and makes slicing easier. This meatloaf is fantastic served with mashed potatoes and green beans or a fresh salad.
