Ingredients
  

For the Chicken

  • 4 pieces chicken thighs or breasts (pounded to make evenly thin) Ensure chicken is pounded evenly.

For the Breadcrumb Coating

  • 1/4 cup grated parmesan cheese
  • 1 cup breadcrumbs (preferably panko) Panko gives a nice crunchy texture.
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • 4 slices mozzarella cheese

Preparation

  • Preheat the oven to 425 degrees.
  • In a small bowl, combine the breadcrumbs, grated parmesan, paprika, salt, pepper, garlic powder, and basil.
  • Press each chicken thigh or breast into the breadcrumb mixture on each side, coating them well.
  • Line a baking sheet with parchment paper and lay each piece of chicken onto the sheet.

Cooking

  • Bake for 15 minutes, then flip the chicken over and cook for another 10 minutes. When done, the juices should run clear, and the internal temperature should be about 170 degrees.
  • Place a slice of mozzarella cheese on top of each piece of chicken and return to the oven until the cheese is melted, about 2-3 minutes.
  • Remove from the oven and serve.

Notes

Serve Chicken Parmesan over a bed of spaghetti and top it with marinara sauce for a delicious meal. Add fresh basil or parsley on top for extra flavor. Store leftovers in an airtight container for 3-4 days. Reheat in the oven or microwave.
