  • 5 cups rotisserie chicken Shredded
  • 8 ounces deli ham Chopped into small pieces
  • 1 cup Swiss cheese Shredded
  • 2 tablespoons unsalted butter Melted
  • 1.5 cups panko bread crumbs
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 6 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1.33 cups milk
  • 0.67 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 0.5 cup Parmesan cheese Shredded
  • 0.5 cup Swiss cheese Shredded
  • 0.33 cup fresh lemon juice
  • Salt and pepper To taste

Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit and spray a 3-quart baking dish with pan spray.
  • Spread the shredded rotisserie chicken in the bottom of the pan. Sprinkle the chopped deli ham evenly over the chicken.
  • In a small bowl, stir together melted butter, panko bread crumbs, Italian seasoning, and salt. Set aside.

Lemon Cream Sauce

  • Melt 6 tablespoons of butter in a medium saucepan over medium heat. Add flour and whisk. Cook for about 2 minutes.
  • Slowly whisk in chicken broth, heavy cream, milk, and Dijon mustard. Whisk until smooth and thickened, about 3-4 minutes.
  • Stir in Parmesan cheese and Swiss cheese until melted. Add lemon juice and salt and pepper to taste.

Assembly and Baking

  • Pour the sauce evenly over the chicken and ham. Top with shredded Swiss cheese, then the panko mixture.
  • Bake for 30-35 minutes until bubbling and the bread crumbs are golden brown.
  • Top with chopped parsley and hollandaise if desired.

Notes

Use leftover chicken or rotisserie chicken for a quicker prep time. Adjust seasoning to taste. Broil for a few minutes for a crispy topping. Can be customized with different meats or cheeses.
