  • 2 cups sweet onion, small dice
  • ¼ cup sherry vinegar
  • 1 tablespoon balsamic vinegar
  • ¼ cup brown sugar Can be adjusted for sweetness.
  • 2 tablespoons maple syrup Can be adjusted for sweetness.

  • ½ teaspoon fresh thyme Optional.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Add the bacon to a large skillet and cook over medium-high heat until crisp. Remove with a slotted spoon and place on a paper towel-lined plate.
  • Discard all but 2 tablespoons of the bacon grease.
  • Add the onions to the reserved bacon grease and cook over medium heat until the onions are translucent, about 4-5 minutes.

Cooking

  • Return the bacon to the pan with the onions, then add the vinegars, brown sugar, maple syrup, water, and thyme if desired.
  • Cook until bubbling, then reduce the heat to low and cook for 10-15 minutes, until thick and dark.

Cooling

  • Transfer the bacon jam to a container and let it cool completely before serving or storing it in the fridge.

Notes

Adjust sweetness with brown sugar or maple syrup. Allow simmering for enhanced flavors. Can customize with spices like cayenne pepper for a spicy kick.
