  • 16 ounces refrigerated buttermilk biscuits Use these for the waffle base.
  • 4 slices Wisconsin American cheese Add your preferred type of cheese.

Preparation

  • Preheat a waffle iron to medium-high heat. Lightly oil the top and bottom or use nonstick spray.
  • Heat a large skillet over medium-high heat. Add the bacon and cook until brown and crispy, about 6-8 minutes. Transfer the bacon to a paper towel-lined plate and set aside.
  • In a medium bowl, mash the avocado with a fork until it’s the consistency you like. Set aside.

Cooking

  • Working in batches, place each biscuit into the preheated waffle iron. Close gently and cook until golden brown and crisp, about 3-4 minutes.
  • Use a butter knife to spread avocado on each of 4 biscuits. Top with bacon, cheese, and the remaining biscuits.
  • Place the sandwiches back in the waffle iron. Close gently and cook until golden brown and the cheese has melted, about 3-4 minutes.

Serving

  • Serve immediately and enjoy!

Notes

This sandwich is best served hot and fresh. Pair it with a simple salad, soup, or fresh fruit for a complete meal. If you have leftovers, let the sandwiches cool and store them in an airtight container in the refrigerator for up to 2 days.
