Ingredients
  

Main Ingredients

  • 4-5 pieces small russet potatoes Best for maintaining shape
  • Salt (to taste)
  • Ground black pepper (to taste)

Garlic Herb Butter

  • ½ cup melted unsalted butter
  • 1 teaspoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh thyme
  • 1 teaspoon finely chopped fresh rosemary
  • 3 teaspoons minced garlic

Instructions
 

Preparation

  • Wash and scrub the 4-5 small russet potatoes well, removing any dirt.
  • Thinly slice the potatoes almost all the way through, leaving about half an inch intact at the bottom of each slice.
  • Season the potatoes with salt and ground black pepper to taste.
  • In a small bowl, combine the melted unsalted butter, chopped parsley, chopped thyme, chopped rosemary, and minced garlic. Mix well.

Cooking

  • Place the seasoned potatoes in the bottom of the air fryer basket.
  • Brush the garlic herb butter mixture generously over the top of the potatoes.
  • Air fry the potatoes at 360 degrees Fahrenheit for 15-20 minutes or until they are tender and golden brown.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a few minutes to restore crispiness.
