  • 805 grams warm water
  • 240 grams sourdough starter (active and bubbly) Ensure it is active for best rise
  • 485 grams hard red wheat
  • 610 grams hard white wheat
  • 50 grams coconut oil (melted)
  • 50 grams honey
  • 21 grams sea salt

Instructions
 

Preparation

  • In a large bowl, mix the warm water and sourdough starter.
  • Add the hard red wheat and hard white wheat to the bowl, mixing until combined.
  • Stir in the melted coconut oil, honey, and sea salt.
  • Knead the dough on a lightly floured surface for about 8-10 minutes until it is smooth.
  • Place the dough in a greased bowl and cover it with a towel. Let it rise for 2-4 hours, or until doubled in size.
  • Gently punch the dough down and shape it into a loaf. Place it in a greased loaf pan.
  • Cover the loaf and let it rise again for another 1-2 hours, until it rises above the edge of the pan.
  • Preheat your oven to 375°F (190°C).
  • Bake the bread for about 30-35 minutes, or until golden brown and sounds hollow when tapped.
  • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

To keep your bread fresh, store it in a plastic bag or an airtight container at room temperature. For longer storage, freeze it, slicing before freezing for easy use later. Experiment with different flours for a unique flavor and consider adding seeds or nuts for extra texture.
