Ingredients
  

Dressing

  • ¼ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground black pepper

Salad Ingredients

  • 8-10 ounces cooked diced chicken breast About 1 large breast
  • 2 stalks chopped celery About 1 cup
  • 1 medium chopped apple
  • 1 cup halved grapes
  • 1 cup toasted chopped walnuts
  • 6 leaves Boston lettuce

Preparation

  • Preheat your oven to 350 degrees Fahrenheit. Place the walnuts on a baking sheet and bake for 5 minutes until toasted. Let them cool.
  • In a small bowl, mix together the plain Greek yogurt, mayonnaise, lemon juice, salt, and black pepper.
  • In a large bowl, combine the cooked diced chicken breast, chopped celery, chopped apple, halved grapes, and toasted walnuts.
  • Pour the dressing over the salad mixture and toss gently to combine.
  • Spoon the salad into the Boston lettuce leaves and serve immediately.

Notes

Waldorf Chicken Salad can be served as a main dish or in lettuce leaves for a fun presentation. Customize the amount of fruit and nuts as desired. If storing leftovers, keep in an airtight container for up to 2 days. Note that the salad may become watery due to the fruits releasing moisture.
