Ingredients
  

Vegetables

  • 1 large carrot peeled
  • 1 medium parsnip peeled
  • 1 medium onion peeled
  • 1 medium-sized Yukon gold potato peeled
  • 1 stalk celery leaves trimmed

Seasoning

  • 0.5 cup sea salt adjust to taste
  • 1.25 cups nutritional yeast
  • 1 tsp cane sugar
  • 1 tsp black pepper
  • 0.5 tsp nutmeg
  • 0.5 cup dried parsley divided

Instructions
 

Preparation

  • Wash all the vegetables thoroughly. Peel the carrot, parsnip, potato, and onion.
  • Cut the carrot, parsnip, onion, potato, and celery into small pieces.
  • In a food processor, add all the chopped vegetables along with the sea salt, nutritional yeast, cane sugar, black pepper, nutmeg, and half of the dried parsley.
  • Process the mixture until it becomes a coarse powder, being careful not to over-process it into a paste.
  • Spread the mixture on a baking sheet and let it dry for a few hours or overnight.

Finalizing

  • Once dried, put the mixture back into the food processor and blend again until you achieve a fine powder.
  • Mix in the remaining dried parsley.
  • Store the seasoning in an airtight container.

Notes

Adjust the salt according to your preference. Consider adding other herbs like thyme or basil for different flavors. Ensure the vegetables are dried completely before grinding to avoid clumping.
