  • 12 ounces spaghetti noodles Cook according to package directions.
  • 2 tablespoons olive oil
  • 1 cup diced onion (about half a large onion)
  • 2 teaspoons minced garlic (about 2 cloves)
  • 1.5 pounds lean ground beef
  • 1 ounce taco seasoning (or 3 tablespoons homemade)
  • 1 10-ounce can Rotel tomatoes
  • 1.5 cups beef broth
  • 3 tablespoons tomato paste
  • 3 ounces softened cream cheese
  • 1.5 cups shredded Colby Jack cheese
  • Chopped fresh cilantro (for garnish)

Instructions
 

Preparation

  • Cook spaghetti noodles according to package directions. Drain and set aside.
  • In a large skillet, add olive oil and diced onion. Cook the onions over medium heat until they are tender and translucent, about 5-6 minutes.
  • Add minced garlic and cook for an additional minute.
  • Add lean ground beef and cook over medium-high heat until meat is no longer pink. Drain excess fat if needed.

Cooking

  • Reduce heat to medium. Stir in taco seasoning, Rotel tomatoes, tomato paste, beef broth, and softened cream cheese. Mix well and cook until cream cheese is melted, about 5 minutes.
  • Fold in the cooked spaghetti and shredded Colby Jack cheese. Stir until cheese is fully melted.
  • Garnish with fresh chopped cilantro and enjoy!

Notes

For added heat, include diced jalapeƱos or use spicy taco seasoning. You can substitute ground beef with ground turkey or a meat alternative for a lighter dish. Feel free to add vegetables such as bell peppers or corn for extra nutrition and flavor.
