  • 1 1-ounce package taco seasoning Mix well to ensure even flavor.
  • 2 cups beef broth Use low-sodium broth for a healthier option.
  • 1.5 cups shredded Mexican cheese blend Can substitute with cheddar or pepper jack.

Preparation

  • Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray and set aside.
  • In a large skillet, cook and brown the ground beef for 7-8 minutes until no longer pink.

Assembly

  • Add the cooked beef to the prepared baking pan, followed by the Minute Rice, Rotel, and taco seasoning.
  • Pour in the beef broth and stir to combine, ensuring the rice is submerged in the liquids.
  • Top with the shredded cheese, cover with foil, and bake for 20 minutes.

Finishing Touch

  • Remove the foil and bake for an additional 5 minutes to melt and brown the cheese on top.
  • Serve hot with your favorite taco toppings.

Notes

For a vegetarian version, substitute ground beef with black beans or lentils. Ensure to cover with foil while baking for proper cooking.
