Ingredients
  

Cereal and Nuts

  • 4 cups corn Chex
  • 4 cups rice Chex
  • 4 cups wheat Chex
  • 2 cups sweetened shredded coconut
  • 2 cups pecan halves

Syrup Mixture

  • 1 cup unsalted butter Melted
  • 1 cup light corn syrup
  • ½ cup granulated sugar
  • ½ cup light brown sugar Packed
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • In an extra-large mixing bowl, combine the Chex cereals with the shredded coconut and pecan halves. Set aside.
  • Line your counter with a large sheet of parchment paper.

Cooking

  • In a medium saucepan, melt the butter over medium-low heat.
  • Add corn syrup, granulated sugar, brown sugar, and salt to the saucepan.
  • Bring the mixture to a boil over medium heat. Once it reaches a rolling boil, boil for 3 minutes while stirring constantly.
  • Remove the saucepan from heat and stir in the vanilla extract.
  • Pour the hot syrup over the dry Chex mix and toss to evenly coat everything.

Cooling

  • Spread the Chex mix out onto the parchment paper and allow it to cool.
  • After cooling, break it into bite-sized pieces and store in an airtight container at room temperature.

Store in an airtight container at room temperature for up to a week. Ensure it cools completely before sealing.
