  • 4 filets skinless salmon filets Make sure they are skinless.
  • 2 tablespoons olive oil For rubbing the salmon.
  • 1 teaspoon salt Divided into two parts.
  • ½ teaspoon pepper To season the salmon.
  • 3 tablespoons water Used to sauté spinach.

Filling Ingredients

  • 4 cups baby spinach Fresh baby spinach.
  • 4 ounces cream cheese Softened.
  • ¼ cup parmesan cheese Grated.
  • ½ teaspoon salt For the filling.
  • 2 teaspoons lemon pepper
  • 1 teaspoon Italian seasoning
  • 1 juice lemon Juice from 1 lemon, additional for serving.

Instructions
 

Preparation

  • Preheat your oven to 475 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
  • Dry your filets with a paper towel and rub them with olive oil, then sprinkle salt and pepper on both sides of the filets.
  • Cut a slit in the side of each filet, being careful not to cut all the way through; just enough to create a pocket.
  • In a medium pan over medium-high heat, sauté your spinach with the water until it wilts. Remove the spinach from heat and drain any excess water if needed.
  • In a medium bowl, combine the cooked spinach, cream cheese, parmesan cheese, salt, lemon pepper, and Italian seasoning. Mix until well combined.
  • Stuff each prepared salmon filet with the filling and place them on the parchment-lined baking sheet. Before baking, pour lemon juice over each stuffed filet.

Cooking

  • Bake for about 8-10 minutes. The salmon should flake apart easily with a fork.

Notes

Be careful not to overcook the salmon; a little pink in the center is okay. Use fresh ingredients for the best flavor. You can prepare the filling ahead of time and stuff the salmon just before cooking. Experiment with different herbs and spices to customize the flavor to your liking.
