Strawberry Shortcake Cheesecake Rolls

Ingredients
  

Cream Cheese Filling

  • 225 grams cream cheese, softened Make sure cream cheese is fully softened for smooth blending.
  • 60 grams granulated sugar
  • 5 milliliters vanilla extract
  • 240 milliliters heavy whipping cream Whip until stiff peaks form.

Strawberry Mixture

  • 150 grams fresh strawberries, diced Allow to macerate for 10 minutes.
  • 25 grams granulated sugar

Crust and Assembly

  • 150 grams shortbread cookies or graham crackers, crushed Feel free to experiment with different cookie crumbs.
  • 60 milliliters unsalted butter, melted
  • 6 large crepes or thin cake layers Store-bought crepes can be used for convenience.
  • Powdered sugar, for dusting Dust just before serving.

Preparation

  • In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract with an electric mixer until the mixture is smooth and creamy.
  • In a separate chilled bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Combine the diced strawberries and granulated sugar in a bowl. Allow them to macerate for 10 minutes until the strawberries release their juices.
  • In a bowl, stir together the crushed cookies and melted butter until the mixture resembles damp sand.

Assembly

  • Lay one crepe on a clean surface. Spread cream filling over it, sprinkle with cookie crumbs, and spoon the macerated strawberries evenly on top.
  • Roll it up tightly like sushi.
  • Wrap each roll securely in plastic wrap and refrigerate for at least 1 hour to set the layers.
  • Trim the ends and slice each roll into 2.5-centimeter pieces.
  • Dust lightly with powdered sugar just before serving.

Notes

These rolls can be stored in the refrigerator, securely wrapped in plastic wrap or in an airtight container. They are best enjoyed within 2-3 days for optimal freshness. If you want to prepare them in advance, just make sure to wrap them well to avoid drying out.
