Ingredients
  

Brownie Layer

  • ½ cup room-temperature unsalted butter Ensure it is softened
  • ½ cup granulated sugar
  • ½ cup lightly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ¼ teaspoon salt

Cheesecake Layer

  • 8 ounces room-temperature cream cheese Make sure it's softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons strawberry sauce (or strawberry jam) Store-bought is fine for convenience

Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit. Line an 8 x 8 x 2-inch baking pan with parchment paper, leaving a 1-inch overhang on either side, and spray with nonstick cooking spray. Set aside.
  • In a mixing bowl, beat together the butter, granulated sugar, and brown sugar until smooth.
  • Add in 2 eggs and 1 teaspoon of vanilla extract. Mix well.
  • Add the flour, cocoa powder, and salt. Stir until just combined. Pour this brownie batter into the prepared baking pan and spread it evenly.

Cheesecake Layer

  • In a separate bowl, beat the cream cheese until smooth.
  • Add the ¼ cup of granulated sugar, 1 egg, and ½ teaspoon of vanilla extract. Mix until creamy.
  • Swirl in the strawberry sauce or jam.

Baking

  • Pour the cheesecake mixture over the brownie layer in the pan.
  • Use a knife or spatula to create swirls in the cheesecake layer if desired.
  • Bake for about 30 to 35 minutes, or until the edges are set. Let it cool in the pan on a wire rack before lifting it out using the parchment paper.
  • Cut into squares and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days, or freeze for up to 3 months. Experiment with other fruit jams for a different taste.
