Ingredients
  

For the filling

  • 1 tablespoon olive oil For cooking the vegetables
  • 1 cup red bell pepper (cut into strips)
  • 1 cup green bell pepper (cut into strips)
  • 1 cup yellow bell pepper (cut into strips)
  • 1/2 cup onion (cut into strips)
  • 1 bunch asparagus (cut in half)
  • 1 tablespoon fajita seasoning Split into two amounts for use
  • 1 pound flank steak (sliced in half) Pounded to 1/4 inch thickness

Instructions
 

Cooking the Vegetables

  • In a large skillet on medium-high heat, add the olive oil.
  • Once the oil is hot, add the red, green, and yellow bell peppers, onion, and asparagus.
  • Add 1 tablespoon of fajita seasoning to the vegetables and sauté until almost tender, about 5 minutes.
  • Remove from heat and set aside.

Preparing the Steak

  • Pound the flank steak until it is about 1/4 inch thick.
  • Slice it in half lengthwise and divide the cooked vegetable mixture equally in the center of the steak pieces.
  • Roll up the flank steak tightly around the vegetables and secure each roll with a toothpick.

Cooking the Roll Ups

  • Heat the skillet back to medium-high heat.
  • Season the steak roll ups with the remaining fajita seasoning and add them to the skillet.
  • Cook each side for 2-3 minutes or until the steak is cooked to your liking.

Notes

Ensure the steak is pounded evenly for uniform cooking. Customize the vegetables as desired, and consider adding cheese for extra flavor.
