Ingredients
  

Sauce

  • 3 tablespoons olive oil
  • 3 tablespoons fresh parsley (chopped)
  • 3 tablespoons fresh chives (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons lemon juice
  • ½ teaspoon Kosher salt
  • Freshly ground black pepper

Steak and Veggies

  • 1 pound top sirloin steak Seasoned with salt and pepper
  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 pound gold potatoes (cut into ½-inch cubes)
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ medium yellow onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 3-4 eggs To cook in wells

Instructions
 

Preparation

  • In a small bowl, combine olive oil, parsley, chives, minced garlic, lemon juice, kosher salt, and black pepper. Mix well and set aside.

Cooking the Steak

  • Heat olive oil in a large skillet over medium-high heat. Season the steak with kosher salt and black pepper. Sear the steak for about 3-4 minutes on each side.
  • Transfer the steak to a cutting board and let it rest for 5 minutes before cutting into cubes.

Cooking the Potatoes

  • In the same skillet, heat a bit of olive oil over medium heat. Coat the cubed potatoes with smoked paprika, garlic powder, kosher salt, and black pepper in a medium bowl.
  • Add the seasoned potatoes to the skillet and cook for about 10-12 minutes until they are golden brown and crispy.

Adding Onions

  • Add the sliced onion to the skillet and cook until the onion is soft and translucent, around 3-4 minutes.

Combining Ingredients

  • Return the cubed steak to the skillet with the potatoes and onions. Stir everything together to combine.
  • Gently fold in the halved cherry tomatoes and cook for an additional minute.
  • Create small wells in the mixture for the eggs.

Cooking the Eggs

  • Reduce the heat to low. Crack an egg into each well created. Cover the skillet with a lid and cook until the egg whites are set but the yolks remain runny, about 4-5 minutes.
  • Alternatively, bake them in a preheated oven at 350°F for 3-5 minutes.

Serving

  • Drizzle the prepared herb sauce over the steak and egg hash. Serve hot, garnished with additional fresh herbs if desired.

Notes

Serve hot with toast or avocado slices. Pair with your favorite hot sauce for an extra kick. For best results, ensure the skillet is hot before adding the steak.
