  • 3 lbs yellow squash (sliced ¼” thin) Pat dry with a paper towel before mixing.
  • ¾ cup sour cream Can substitute with Greek yogurt for a lighter version.
  • 2 large eggs (lightly beaten) Ensure they are room temperature for better mixing.
  • 1 ½ cups shredded cheddar cheese Cheddar adds a rich flavor.
  • ½ cup grated parmesan cheese Enhances cheesiness.
  • ½ teaspoon onion powder Adds savoriness.
  • ¼ teaspoon garlic powder For additional flavor.
  • to taste Salt and pepper Season according to preference.
  • 2 sleeves Ritz crackers (crushed) Provides a crunchy topping.
  • ¼ cup butter (melted) Use to coat the crushed crackers.

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • Slice the squash to be ¼ inch thick and pat dry with a paper towel.
  • In a large bowl, stir together sour cream, eggs, cheddar cheese, parmesan cheese, onion powder, garlic powder, salt, and pepper until well combined.
  • Add the sliced squash to the mixture and mix well.
  • Evenly pour the ingredients into an 11×7” baking dish.

Topping

  • Mix the crushed Ritz crackers with melted butter until fully coated, and then sprinkle it over the casserole.

Baking

  • Bake in the preheated oven for about 30 to 35 minutes, or until the topping is golden brown and the casserole is bubbling.

Notes

Serve hot as a side dish. Pairs well with roasted meats or grilled chicken. For a spicier twist, add a pinch of cayenne pepper.
