  • 4 pieces flour tortillas Use whole wheat for a healthier version.
  • 1 tablespoon olive oil For cooking the spinach.

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add the chopped spinach and cook until wilted.
  • Remove from heat and stir in the crumbled feta cheese, adding salt and pepper to taste.

Cooking

  • Spread the spinach and feta mixture over half of each tortilla.
  • Fold the tortillas in half and place them in the skillet.
  • Cook until the tortillas are golden brown and crispy, then flip and cook the other side.
  • Remove from skillet, cut into wedges, and serve warm.

Notes

Serve with sour cream, salsa, or guacamole. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet or microwave before serving.
