Cookie Ingredients

  • 1 cup unsalted butter, room temperature Make sure your butter is at room temperature for easier mixing.
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour Can substitute with gluten-free flour for gluten-free cookies.
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon Can add more for an extra kick.
  • 1 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 cup granulated sugar (for rolling)
  • 1 tbsp ground cinnamon (for rolling)

Icing Ingredients

  • 2 tbsp unsalted butter For icing.
  • 3 tbsp pure maple syrup For icing.
  • 3/4 cup powdered sugar For icing.

Instructions
 

Preparation

  • In a bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
  • Add in the pure maple syrup, egg, and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, kosher salt, ground cinnamon, ground ginger, ground nutmeg, and ground cloves.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  • Refrigerate the dough for about 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix together the granulated sugar and ground cinnamon for rolling.
  • Scoop tablespoon-sized balls of dough and roll them in the cinnamon sugar mixture. Place them on the baking sheet, leaving space between each one.
  • Bake for 10-12 minutes or until the edges are slightly golden.

Icing

  • While the cookies cool, prepare the icing by whisking together the unsalted butter, pure maple syrup, and powdered sugar in a bowl until smooth.
  • Drizzle the icing over the cooled cookies.

Notes

Store cookies in an airtight container at room temperature for up to a week. To freeze, place in a freezer-safe bag for up to three months. Thaw before enjoying. Consider adding chopped nuts or chocolate chips to the dough for variations.
