Ingredients
  

For the Cookie Dough

  • 6 Tablespoon Unsalted Butter (Softened) Make sure your butter is softened for easy mixing.
  • 3/4 Cup Dark Brown Sugar (Packed) You can also use light brown sugar.
  • 2 Tablespoon Granulated Sugar
  • 1/2 Cup Molasses (Unsulphured)
  • 2 Teaspoon Vanilla Extract
  • 1 Large Egg
  • 3 Cup All-Purpose Flour
  • 1 Tablespoon Ground Cinnamon
  • 1 Tablespoon Ground Ginger
  • 1/2 Teaspoon Ground Cloves
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Baking Powder
  • 2 Tablespoon Milk (if needed) Add if the dough is too dry.

For Decorating

  • Frosting and candy Optional for decoration.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper. Set them aside.
  • In a large bowl, beat together the softened butter, dark brown sugar, and granulated sugar until smooth.
  • Mix in the molasses until well combined, then add the vanilla extract and egg. Beat until just mixed.
  • In a medium bowl, whisk together the all-purpose flour, ground cinnamon, ground ginger, ground cloves, salt, and baking powder.
  • Gradually add the dry mixture to the wet mixture and mix until combined. If the dough is too dry, add 2 tablespoons of milk to help it hold together.
  • Roll the dough out on a lightly floured surface to about 1/4 inch thick. Cut out your desired gingerbread shapes and place them on the prepared baking sheets, leaving about an inch of space between them.

Baking

  • Bake in the preheated oven for 7-9 minutes, or until the centers are just set.
  • Remove from the oven and let the cookies sit on the baking sheets for 2 minutes before transferring them to a cooling rack.
  • Once cooled, frost and decorate if you like.

Notes

Store any leftover cookies in an airtight container with parchment paper between the layers. You can also freeze them for up to 3 months. Feel free to add your favorite spices or adjust the amount of ginger for a stronger flavor.
