  • 4 small tortillas soft tortillas
  • 1 cup shredded cheese cheddar or American

Instructions

Instructions

  • Divide the beef into four loose ¼-pound balls. Set out the cheese, onion, tomatoes, pickles, ketchup, and mustard.
  • Heat a sturdy skillet over medium-high heat. Add two beef balls, press each into a thin patty, and season with salt and pepper; cook for about 3–4 minutes per side until browned and 160°F in the center, checking from the side with a thermometer. If substituting ground turkey or chicken, cook to 165°F.
  • Repeat with the remaining two patties. Warm the tortillas in a separate dry pan or microwave until pliable and keep covered until assembly.
  • Place one hot patty on each tortilla and add ¼ cup cheese to each. Divide the onion, tomatoes, and pickles among the tacos, add ketchup and mustard to taste, fold, and serve immediately.

Notes

  • The 26-minute estimate allows two patty batches; thicker patties may take longer.
  • Refrigerate patties and toppings separately within 2 hours; use cooked beef within 3–4 days.
  • Reheat patties to 165°F, then assemble with warmed tortillas and cold toppings.
