  • 1 lb red potatoes, diced
  • 1-2 cups shredded cheddar or Colby Jack cheese
  • 1 cup chopped lettuce or mixed greens
  • 1 small onion, diced
  • 1-2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • 1/2 teaspoon Cajun seasoning (adjust to taste)
  • Pickles
  • Extra lettuce
  • Fresh parsley (for garnish)

Instructions
 

Cooking Potatoes

  • Preheat your air fryer to 400°F. Toss the diced potatoes with olive oil, salt, and pepper.
  • Air fry for 16–18 minutes, shaking halfway through, until they are golden and crispy.

Caramelizing Onions

  • Heat a skillet over medium-low heat and add a little olive oil.
  • Add the diced onions and cook for 10–15 minutes, stirring occasionally, until they are soft and golden.
  • Remove from the pan and set aside.

Cooking Beef

  • In the same skillet, increase the heat to medium-high.
  • Add the ground beef, break it up, and press it into the pan to create crispy edges.
  • Cook for 5–7 minutes until browned and season with salt and pepper.
  • Drain any excess fat if necessary.

Making Sauce

  • In a small bowl, whisk together the mayonnaise, ketchup, mustard, and Cajun seasoning until smooth.

Assembling Bowls

  • Add the crispy potatoes to bowls, top them with the beef, caramelized onions, and shredded cheese.
  • Drizzle with the special sauce and finish with lettuce and optional toppings.

Notes

Serve warm for the best experience. Add extra pickles, lettuce, or toppings as desired. This dish pairs well with crispy fries or a garden salad. Store leftovers in an airtight container for 2–3 days, keeping ingredients separate if possible to maintain texture.
