Slow Cooker Cheesy Mozzarella Chicken

- 3–4 pieces boneless skinless chicken breasts Ensure breasts are dry before seasoning.
- 240 ml shredded mozzarella cheese Use more if desired.
- 60 g grated parmesan cheese
- 240 ml heavy cream or whole milk Can substitute with dairy-free alternatives.
- 120 g cream cheese or thick double cream
- 1 teaspoon garlic powder Adjust to taste.
- 1 teaspoon Italian seasoning Adjust to taste.
- 0.5 teaspoon paprika Adjust to taste.
- Salt and freshly ground black pepper, to taste Season as preferred.
- Fresh spinach, mushrooms, or assorted herbs for enhanced flavor Optional additions for extra flavor.
Instructions
Preparation
- Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, Italian seasoning, and paprika.
- Arrange the seasoned chicken breasts in a single layer in the slow cooker.
- In a bowl, whisk together the cream (or milk) with cream cheese until smooth.
- Pour the creamy mixture over the chicken and cover the slow cooker.
- Cook on low for 5–6 hours or on high for 3–4 hours until the chicken is tender and fully cooked.
Finishing
- Stir in the grated parmesan cheese.
- Sprinkle the shredded mozzarella cheese on top and cover again.
- Cook for a further 10–15 minutes until the cheese is melted and bubbling.
- Shred the chicken in the pot for a creamy texture or serve whole.
Notes
Pairs well with pasta, rice, mashed potatoes, or crusty bread. Can be stored in an airtight container for 3-4 days in the refrigerator or up to 2 months in the freezer.
