Skillet Sesame Chicken and Broccoli

Ingredients
  

Chicken and Broccoli

  • 4 pieces chopped boneless skinless chicken breasts (1 ½ inch pieces)
  • 2 cups broccoli florets (steamed until tender)

Coating and Sauce

  • 4 tablespoons corn starch For coating the chicken
  • 2 tablespoons olive oil For frying
  • 6 tablespoons honey
  • 4 tablespoons ketchup
  • 3 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 2 tablespoons white vinegar
  • 3 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 2 tablespoons cornstarch For thickening the sauce
  • 2 tablespoons cold water To mix with cornstarch
  • to taste Sesame seeds For garnish

Preparation

  • Combine the chopped chicken breasts and corn starch in a large resealable bag. Shake to coat the chicken evenly.
  • In a separate bowl, whisk together the honey, ketchup, granulated sugar, brown sugar, white vinegar, soy sauce, and garlic powder. Set this sauce aside.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Add the coated chicken pieces and cook for 5-6 minutes until they are browned.
  • Add the steamed broccoli florets to the skillet, then pour the sauce over the chicken and broccoli. Stir and cook for another 4-5 minutes until the chicken is fully cooked.
  • In a small bowl, mix together the cornstarch and cold water. Pour this mixture into the skillet and stir until the sauce thickens.
  • Sprinkle sesame seeds over the top and serve hot.

Notes

Serve over cooked rice or noodles. Best enjoyed fresh but makes great leftovers. Store in an airtight container for 3-4 days in the fridge. Reheat in the microwave or on the stove until warmed through.
