Preparation

  • In a large mixing bowl, combine the dry ingredients: flour, baking powder, and salt. Whisk these ingredients together.
  • Add the wet ingredients—milk and eggs. Mix until you have a smooth batter.
  • This batter is thicker, so using a piping bag or squeeze bottle with a large opening works best for poffertjes.

Cooking

  • Place the poffertjes pan on the stove at medium heat to ensure it is well heated. In another pan, heat a piece of butter until melted. Use a brush to grease the poffertjes pan.
  • Fill the holes of the pan about two-thirds full with batter. If bubbles appear on top, use a fork or wooden skewer to turn them over.
  • Grease the pan with butter for each round of poffertjes, and cook until they turn a nice golden brown color.
  • Serve the poffertjes immediately, or place them on a platter covered with another plate or aluminum foil to keep warm.
  • Dust poffertjes generously with powdered sugar and add a small cube of butter before serving.

Notes

Poffertjes can be enjoyed plain or with additional toppings like syrup, fruit, or whipped cream. For storage, keep in an airtight container at room temperature for up to two days or freeze for up to one month.
