  • 2-6 pounds bone-in prime rib (boned and tied)
  • 1 cup butter (softened)
  • 5 cloves garlic (minced)
  • 1 tablespoon thyme (finely chopped)
  • 1 tablespoon oregano (finely chopped)
  • 1 tablespoon rosemary (finely chopped)
  • 1 tablespoon salt
  • 1 teaspoon pepper

Preparation

  • Remove the prime rib from the refrigerator 2 hours before cooking, allowing it to reach room temperature.
  • Place the roast bone side down on a cutting board. With a sharp knife, slice along the curve of the bones to separate them from the meat, stopping about 1/2 inch from the bottom to keep the bones connected.
  • Preheat your oven to 450°F.
  • Tie the roast with butcher’s twine every 2 inches to secure the bones against the meat.
  • In a small bowl, mix together the softened butter, minced garlic, chopped thyme, oregano, rosemary, salt, and pepper.
  • Rub the butter mixture all over the outside of the prime rib.
  • Place the roast in a roasting pan or large skillet with the fat side up.

Cooking

  • Bake the roast for 15 minutes at 450°F. Then, reduce the oven temperature to 325°F.
  • Cook for about 15 minutes per pound of meat until it reaches an internal temperature of 110°F.
  • Remove the prime rib from the oven and let it rest under foil for at least 20 minutes. The internal temperature will rise to 130°F for medium-rare.

Serving

  • Slice the prime rib into thick, juicy pieces and serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
  • Offer horseradish or au jus for dipping to enhance the flavors!

Notes

Allow the roast to rest before carving to retain juices. Use a meat thermometer for perfect doneness. Experiment with different herbs to customize flavor.
