  • 1 cup rolled oats
  • 2 cups almond milk (or any milk of your choice)
  • 1/4 cup chopped pecans, toasted

Sweetener and Flavoring

  • 2 ripe peaches, diced Use ripe peaches for the best flavor and sweetness.
  • 2 tablespoons brown sugar Feel free to reduce for fewer calories.
  • 1 teaspoon ground cinnamon Plus extra for garnish.
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Preparation

  • In a small saucepan over medium heat, combine the diced peaches, brown sugar, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the peaches are soft and caramelized. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine the rolled oats, almond milk, ground cinnamon, and vanilla extract. Stir well to ensure that the oats are fully submerged in the liquid.

Layering

  • In a clear glass or jar, add a layer of the oat mixture at the bottom. Follow with a layer of the caramelized peaches, then add another layer of oats.
  • Repeat the process until the glass is filled, finishing with a layer of peaches on top.

Chilling

  • Cover the glass or jar with a lid or plastic wrap and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and soften.

Notes

Serve straight from the jar or glass. Top with extra chopped pecans and a sprinkle of cinnamon. Store leftovers in the refrigerator for up to 3 days. If too thick, stir in a bit more milk. You can switch up the nuts or add Greek yogurt for extra protein.
