  • 4 pieces boneless skinless chicken breasts
  • 0.5 cup all-purpose flour Can be substituted with gluten-free flour
  • 2 large eggs Beaten
  • 0.25 cup milk
  • 1 cup bread crumbs Italian-style recommended
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil For frying
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced

Preparation

  • Preheat your oven to 375°F (190°C).
  • Prepare three bowls: one with the flour, another with the beaten eggs mixed with milk, and the last one with bread crumbs, Parmesan cheese, and seasonings.

Cooking

  • Dredge each chicken breast in the flour, dip it in the egg mixture, and then coat it evenly with the breadcrumb mixture.
  • Heat the olive oil in a skillet. Cook the chicken for 3-4 minutes on each side until it turns golden brown.
  • Transfer the chicken to a baking dish. Mix the shredded mozzarella with the remaining Parmesan cheese and minced garlic, then sprinkle this mixture over the chicken.
  • Bake for 20-25 minutes or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).

Serving

  • Serve hot with your favorite sides such as a fresh garden salad, steamed vegetables, or creamy mashed potatoes.

Notes

Make sure not to overcrowd the skillet when frying the chicken. For an extra crispy coating, you can double-dip the chicken in the egg and breadcrumb mixture. Let the chicken rest for a few minutes after baking for juicier results.
