  • 4 pieces boneless skinless chicken breasts
  • 4 pieces chopped bell peppers (any color)
  • 1 cup chopped white onion
  • 2 tablespoons vegetable oil
  • to taste Salt and pepper
  • 2 teaspoons taco seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 piece Juice of 1 lime
  • to taste Chopped cilantro

Instructions
 

Preparation

  • Preheat your oven to 375 degrees Fahrenheit and lightly spray a sheet pan with non-stick cooking spray.
  • Cut the 4 boneless skinless chicken breasts into 1-inch pieces. Place the chicken, chopped bell peppers, and chopped onion in a large bowl.
  • Drizzle 2 tablespoons of vegetable oil over the mixture.
  • Season with salt and pepper, along with 2 teaspoons of taco seasoning, 1 teaspoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of garlic powder. Toss everything together to mix well.
  • Transfer the mixture to the prepared sheet pan and spread it out evenly.

Cooking

  • Bake in the oven for 15-20 minutes until the chicken is fully cooked and the veggies are tender.
  • Once done, drizzle with the juice of 1 lime and sprinkle chopped cilantro over the top.

Serving

  • Serve alone or over steamed rice, or wrap in tortillas for delicious fajitas.

Notes

Make sure to chop your vegetables into similar sizes for even cooking. Feel free to add more spices or ingredients according to your taste. You can substitute chicken with tofu or chickpeas for a healthier option, and use different vegetables if desired.
